Recipe: Jalapeño Chile and Cilantro Salsa

Ingredients

  • 5 jalapeño chiles
  • 1 bunch of cilantro
  • 3 garlic cloves
  • 1 small onion
  • 3/4 cup of water
  • 1/3 cup of olive oil
  • Thyme, oregano and bay leaf to taste
  • Salt to taste

Preparation

Chop the chiles, onion and garlic in a food processor or molcajete (stone mortar) and add water. Put the mixture in a salsa dish, add salt and the chopped cilantro. Transfer the mixture to a glass jar. Season with thyme, bay leaf, salt and fresh oregano. Stir slowly and gently pour in the olive oil.
