Chef Close-Up with Sonia El-Nawal : Fig Endive Salad

Ingredients
- 3 large endives cut at an angle
- baby arugula (2 large overflowing handfuls)
- 3-5 whole figs, cut into 4 pieces each (can be substituted with a pear)
- 5-6 cherry tomatoes cut in half
- a small bundle of chives cut in large pieces
- 1/2 red onion cut in half moons, thinly sliced (optional)
- 2 large spoons of olive oil
- 2 large spoons of balsamic vinegar
- colima salt (season to taste)
- fresh ground black pepper (season to taste)
**It's important to note if you are buying your lettuce and produce in Mexico at a mercado or even the supermarket, be on the safe side and either buy packaged lettuce and produce that are ready to eat or be sure to soak your lettuce, tomatoes, chives and figs for 10 minutes in water with drops of iodine or bleach. If you are new to this, you can typically buy iodine drops in the supermarkets in Mexico. A popular brand sold is called microdyn.
Preparation
Add your endives, baby arugula, figs, cherry tomatoes, chives and red onion into a large bowl. If you want the salad to be sweeter, then add more figs to taste. Then mix the salad well. The ratio of each ingredient should be equal. Then add the olive oil and balsamic vinegar. About two large spoonfuls each. Season to taste with colima salt and fresh ground black pepper. Mix the salad well and then serve in individual bowls or plates. Buen provecho!
